Characterization of inhibitory supernatants produced by bacteria isolated from goat milk

Several compounds can be produced by lactic acid bacteria (LAB) isolated from milk such as bacteriocins, small cationic and thermostable peptides, that possess antimicrobial activity. The technological application of these became important for the industry mainly because chemical preservatives. This study aimed to isolate LAB with anti-Listeria monocytogenes activity raw goat characterize their inhibitory cell-free supernatants (CFS). It was performed Isolation milk, CFS, characterization CFS under different conditions, mode action active adsorption substances present in LS2 L. monocytogenes, molecular identification isolates Three strains proteinaceous nature, identified 16S rDNA Weissella cibaria (LS1) Lactococcus lactis (LS2 LS3). showed highest (1600 arbitrary units/mL) after 2 h at pH 6.0 bacteriostatic low temperatures 4 °C 80 °C. results suggest strain is a biopreservative culture potential applications control foods.
